Turkey Roll-Up's

This simple idea is SO simple, it seems almost too basic to share, but then again, we all know those stressful mornings when the simple things don't come to mind!  It can be challenging to try and figure out what to take for a healthy lunch to go - so here's a very simple idea for you! Whether taking food for lunch, going on a picnic, packing for a road trip, or making an after school snack, these roll-up's are easy, nourishing, tasty, and can be put together quickly and ready to go.  This was inspired by the prepared and packaged turkey roll up's you can purchase at the store, they are a simple crowd pleasing snack.  But if you want to avoid food like the tortilla wrap and cream cheese included with those, here's your answer - just wrap the turkey!  

Another bonus about this recipe idea is that it includes ingredients that you likely already have on hand, and if not, just altar the recipe to include whatever you do have on hand! 

Start with a piece of sliced deli meat, my choice is turkey, but be creative and experiment with your favorites.  Next add a "spread" - olive tapenade, whole30 mayo, smashed avocado, guacamole, hummus, whatever your favorite spreadable is.  Then add the toppings, this sounds like we are making pizza, right?! Some topping ideas could be avocado, tomato, arugula, lettuce, sliced olives, basil leaves, all of those go great together, but be imaginative with your own list.

Lay your deli meat out on a cutting board, add your "spreadable", cover with your toppings and roll it up!  These are easily packed away in a ziploc or tupperware container for travel.  Another option is to slice and skewer the roll up's which creates a great presentation for an appetizer.
