Sloppy Joe in a Bowl

This is absolutely the best sloppy joe recipe I have ever had! Although I must admit to the fact that I haven’t been a sloppy joe connoisseur my whole life, but it is now amongst my favorites! It wasn’t a regular on my list of ideas because I don’t eat a lot of bread and of course a sloppy joe must be served on a bun, right? When I saw this idea to serve the sloppy joe mix on spaghetti squash - bingo - now this I can do and enjoy! Thank you Mary’s Whole Life for this recipe inspiration!

INGREDIENTS -

2 Tbsp olive or avocado oil, divided
1 pound ground beef, organic is best
3/4 cup red onion, diced
2 cloves garlic, minced
1 Tbsp tomato paste
1 cup organic marinara sauce
1/4 cup coconut aminos
1 Tbsp dijon or yellow mustard
1 tsp chili powder
1/2 tsp sea salt
1 Tbsp hot sauce
1 tsp apple cider vinegar
1/4 tsp crushed red pepper
1 large spaghetti squash
Broccoli

Spaghetti Squash

Preheat oven to 400. Cut a large spaghetti squash in half and scoop out the seeds. Place cut side down on a parchment lined baking sheet and bake for 35 - 45 minutes, testing for softness to determine if it is done. Remove from the oven and turn the squash over to cool for a bit. When cooled enough to handle, use a fork to remove the spaghetti strands and set aside in a bowl.

Sloppy Joes Beef

While the squash is cooking, heat the oil in a large skillet over medium heat. Add in the onion and garlic and saute for 5-7 minutes until softened. Add in the ground beef and stir until browned and cooked through. Stir in remaining sloppy joe ingredients and bring to a boil. Reduce heat and simmer until ready to serve.

Broccoli

A simple steamed broccoli suits me, but if you have another preferred way to cook the broccoli, anything works here.

To assemble your bowl, place a serving of spaghetti squash in the bottom of the bowl, then top with sloppy joe mix and broccoli. Other optional toppings could be cilantro, cheese, lettuce, or your other favorites! Enjoy!
