Dijon Grilled Salmon

4 salmon fillets
2 Tbl chopped fresh parsley
2 Tbl olive oil
2 Tbl Dijon mustard
2 Tbl fresh squeezed lemon juice
salt & pepper
Lemon slices for topping

I had made a recipe for a honey dijon sauce over salmon that was just a tease for my taste buds.  I wanted more of a "dijony" flavor, less sweet, but yet one that would perfectly compliment the flavor of the salmon.  So I set out to try and create what I thought was the perfect dijon topping for salmon.  After working on this recipe a few times, too much of this, too much of that, I realized the magic answer was two -  two tablespoons of each of four ingredients - dijon, parsley, olive oil, and lemon juice - made for the perfect salmon topping I was looking for.  So just remember, the magic number is two :-)  

In a small bowl combine the parsley, olive oil, dijon mustard, and lemon juice, then add salt & pepper to taste.  Brush a little olive oil on top of the salmon with a sprinkling of salt and pepper, then drizzle the "magic" on top of the salmon slices.  Add a lemon slice and place on the grill.

When you are following a paleo type diet and/or not eating processed food, recipies such as this are good to keep in mind to compliment your protein.  Eliminating cheese sauces and heavy cream toppings leaves an opportunity for some creativity in seasoning up your meal. This recipe is a good one to keep in mind, along with ideas such as chimichurri sauce, olive tapenade, and pestos.

How easy was that? Add a vegetable and a salad and you are set for an evening of healthy and tasty eating. Enjoy!
