Herb Crusted Pork Tenderloin

Oh so simple, so tasty, and so healthy - when a meal fits into all three of those categories, it makes the list of recipes to keep around for a while - and also one that is worthy to share! 😀

The hardest part of this was finding the right pork tenderloin. As I aim toward supporting local, organic, and humanely raised pork, finding those resources hasn’t always been easy. The best place for me happens to be the market “all the way across town” that has the best selection of pork. Oh well, it just takes a little planning ahead and I figure my health is worth that right? But once you’ve got that good pork tenderloin - here is a simple, tasty and healthy meal for your busy days.

INGREDIENTS -

Pork tenderloin
1-2 Tbsp olive oil
2 cloves garlic, minced
1/4 tsp each salt and pepper
1 tsp dried or fresh thyme, minced
1 tsp dried basil
1/2 tsp dried or fresh rosemary, minced

Preheat the oven to 425. In a small dish combine the garlic, salt, pepper, thyme, basil, and rosemary.

Place the pork tenderloin in a baking dish and rub the olive oil into the meat, using 1-2 tablespoons to ensure the whole roast is coated. Massage the herb mixture into the roast, covering all of the meat and fat.

Roast the pork for approximately 30 minutes, checking the internal temperature for it to reach 155 degrees. The time will vary depending on the size of your pork tenderloin. When the pork reaches 155 degrees, remove from the oven and allow it to rest for at least 15 minutes before slicing. The meat will continue to cook after it is removed from the oven, this can easily be overcooked and become dry, so being timely about removing from the oven is important.

How simple was that? If you happen to purchase your pork tenderloin in a “two pack”, double your herb mixture and cover both tenderloins, wrap the second one tightly in saran wrap, and set in a freezer bag to store away for another busy day.

This is an easy meal to complete by adding 2 or 3 different vegetable side dishes, making the majority of your plate vegetables and then just a couple slices of pork tenderloin. Maybe a little better balance in life and health 😉 Enjoy!
