Keto/Whole30 Homemade Granola
This recipe was shared with me along with a taste test (the best way to share a recipe 😊), and it passed the test! I couldn’t wait to try making it myself. Therefore, I will pass it along . . .
The recipe is from Keto Connect and it is a great addition to your menu if you are following a Keto meal plan. I’m not a huge fan of the flavor of artificial sweeteners, although I hear some are definitely better than others, thus I have adapted the recipe to Whole30. This is done simply by replacing the artificially sweetened maple syrup with pure maple syrup or honey. So whatever your eating plan - you can make this work for you. And only 5 ingredients? This is so simple and lends an amazing flavor - the perfect combination!
INGREDIENTS -
3/4 cup flaxseed
2 Tbsp chia seeds
1 cup unsweetened coconut flakes
2 cups roughly chopped nuts - almonds, pecans, walnuts, or your favorite
6 Tbsp pure maple syrup, honey, or for Keto - a sugar free option
1 1/2 tsp ground cinnamon
Preheat the oven to 350 degrees. Combine everything together in a large bowl. Place parchment paper on a heavy baking sheet pan, or use a heavy baking dish, and spread the mixture to a single layer. Bake for 15-20 minutes, stirring occasionally. Utilize a middle rack as some of the ingredients can cook rather quickly so keep a close eye on it. Remove from the oven to cool. After the granola has cooled, store in an airtight container.
Serve with coconut milk, almond milk, or your favorite dairy alternative, and for Keto - pour on the cream!
