Green Beans, Onion, & Goat Cheese

The inspiration for this recipe came from a photo in a magazine, I guess sometimes pictures really do speak a thousand words, and these were all talking to my taste buds 😁

This is just a simple vegetable side dish that is dressed up to make a delicious presentation, and the ingredients add amazing flavors to your already tasty green beans without overpowering them!

INGREDIENTS -

1 pound green beans, washed & trimmed
2 Tbsp olive oil
1/2 cup red onion or shallots, thinly sliced
1 tsp lemon juice
2 tsp lemon zest
1/2 cup walnuts or pecans, chopped & toasted
salt & pepper
2 oz. crumbled goat cheese

Bring a large pot of water to a boil. While waiting for the water to boil, place some water and ice in a large bowl to ice down the green beans after cooking.

Add the green beans to the boiling water and cook for 3 minutes. Remove beans from the boiling water and immerse them in the ice water until cool. The beans could be cooked up to 2 days in advance - I love these ideas that make dinnertime prep easy!

Heat the olive oil in large saucepan to medium. Add the onions/shallots and cook, stirring occasionally, until browned and very soft, about ten minutes. Add the green beans, lemon zest, and half of the nuts and stir for a couple of minutes until heated through. Add lemon juice, then sprinkle salt and pepper to your liking.

Place in a serving dish, top with the goat cheese and remaining nuts.
