Chicken Apple Sausage
I think a lot about planning for dinnertime, how to make it easy, healthy, and tasty, and even some make ahead dinners, but - what about breakfast? Sometimes that can be the busiest time of day, right?
I found this recipe idea from Kelsey at Little Bits of Real Food and she has nailed it! The ingredients are back on my shopping list to make a double batch next week for sharing at a family gathering. It is easy to make ahead of time, or even freeze for use later.
INGREDIENTS -
1 pound ground chicken (organic is best)
1 clove minced garlic
1/2 cup minced apple
1/4 tsp rubbed sage
2 tsp minced parsley
1 tsp salt
1/4 tsp pepper
You simply combine all of the ingredients in a bowl, this is one of those tasks that is best done with your hands 👐. Heat 2 tablespoons of olive or avocado oil in a fry pan to medium high. Place a scoop of the sausage mixture in the pan, pressing down to form a patty. The mixture is sticky, I found it worked best to press down with the spatula to form a patty, then turn it over and scrape it off the spatula with gloved hands. Cook for 3 minutes per side.
Now for the best part - this is a perfect make ahead breakfast! Double (or more!) the recipe, and cook them all up, it takes just a little extra time. Store in the refrigerator to use later in your week or wrap each patty individually in plastic wrap and place them in a freezer storage bag. On those busy mornings, they are ready for your breakfast with just a quick warm up. This sausage patty is perfect alongside a hard boiled egg and fruit!
