Grilled Chicken with Avocado Salsa
Cilantro, lime, and avocado’s - how can you go wrong when you see those items as the main ingredients in a recipe idea?!?! 😛
This may look like a long list of ingredients, but don’t worry, it actually goes together quite simply. Assemble the chicken marinade ingredients first and set aside, then prepare the salsa. When it’s time to serve dinner it is only about 15 minutes of cooking time for the chicken and you are done! And - this has a great presentation for serving guests, they will think you have been in the kitchen all day 😆.
INGREDIENTS -
2-4 chicken breasts, sliced horizontally
Salt and pepper
Marinade -
2 garlic cloves, minced
1/4 cup olive oil
1/3 cup cilantro, chopped
Juice of 1 lime
1/2 tsp cumin
1/2 tsp paprika
Avocado Salsa -
2 avocados, diced
1 cup chopped tomato
1/4 cup finely minced red onion
1/2 cup cilantro, chopped
Juice of 1 lime
1/2 tsp salt
1/4 tsp pepper
In a large bowl whisk together all of the marinade ingredients and set aside. Slice the chicken breasts horizontally, salt and pepper each side, and then cover thoroughly with the marinade. Slicing the chicken breast in this manner allows the marinade to penetrate more of the meat, and it cooks up in less time and more evenly. It also provides a more reasonable serving size, the funny thing is, when you eat a “piece” of this chicken, it is actually only half of a chicken breast but yet you feel like you have eaten the whole thing! Marinade the chicken for at least 30 minutes, or up to all day.
In a medium size bowl combine all of the ingredients for the salsa.
What is your favorite way to cook chicken? Grilling is my favorite, but I have also made this recipe by cooking the chicken in an Instant Pot, and it seems like pan fried would work great too! Choose your favorite method, grilling or pan frying takes approximately 7-8 minutes on each side, or to an internal temperature of 165 degrees.
