Lemon Basil Vinaigrette

This lemon basil vinaigrette is super simple to make, stores well in the refrigerator, is a perfect topping for a healthy salad, and who knows, maybe the leftovers will marinate your chicken the next day 😬.

I keep a living basil plant on my kitchen counter, there is a perfect spot for it by a window with filtered light conditions. But, after about 6 months, it gets a little worn and needs to be replaced with another flourishing plant. That’s ok because the cost of a new plant is equal to the cost of a bundle of fresh basil at the store that is only going to last a week, such a great deal!

It was about time to switch out the plant so this recipe seemed like a good use of the last of the basil. This dressing came out great so it must be shared for you to add to your list of simple, healthy ideas. You just add a few ingredients to your basil - olive oil, lemon zest, lemon juice, honey, garlic, salt and pepper, and it turns out a terrific salad dressing.

INGREDIENTS -

1/2 - 1 cup fresh basil leaves, or a handful, no need to accurately measure, you can’t go wrong 😊
1/2 cup olive oil
1/2 tsp lemon zest, about half a lemon
2 Tbsp lemon juice
1 Tbsp honey
1/4 tsp garlic powder
1/4 tsp each salt and pepper

Place all of the ingredients into a small food processor and blend together. It is so easy! Making your own salad dressing is a small and easy step to add to your routine in an attempt to eat clean food. There are so many challenges to eliminate food containing contaminates and toxins harmful to our bodies, the endeavor can be overwhelming. This may be one small step, but every step counts in the mind-boggling effort to eating healthy!

So here’s to your step in the right direction, making your own salad dressing 😆, and, in my opinion, it tastes better than store bought! I have another favorite with balsamic, recipe to follow soon! Enjoy!
