Flourless Chocolate Cake
Sometimes it’s hard to please everyone right? Some don’t eat sugar, some don’t eat flour, some REALLY want chocolate, so - you just do the best you can!!
That was my attitude when I attempted a dessert for a shared meal recently, I will just do the best I can, and it worked, they loved it! I’m not a fan of sugar, and really don’t consider myself a baker, but this was a fun experiment and actually pretty easy for as elegant as it looked and how good it tasted.
INGREDIENTS -
1 cup semisweet chocolate chips or chopped chocolate
1/2 cup unsalted butter
3/4 cup granulated sugar
1/4 tsp salt
1 tsp vanilla
3 large eggs, slightly beaten
1/2 cup Dutch processed cocoa powder
Cooking spray
FOR THE CHOCOLATE GANACHE TOPPING -
1 cup semisweet chocolate chips or chopped chocolate
1/2 cup heavy cream
Preheat oven to 375 degrees and grease an 8 inch round cake pan with nonstick cooking spray. Cut a piece of parchment paper to fit in the bottom of the pan and place it in the pan. Spray cooking spray over the top of the parchment paper.
Place the chocolate and butter for the cake ingredients into a large microwave safe bowl. Heat for one minute, then stir, heating in additional 20 second intervals until it is melted together. Stir until the mixture is smooth.
Add the sugar, salt, and vanilla and stir to combine. Add the eggs and stir until smooth, then stir in the cocoa powder until just combined, do not over mix.
Pour the batter into the cake pan and bake for 25 minutes, or until there is a thin crust on top and the center registers 200 degrees.
Cool the cake on a wire cooling rack for 10 minutes. Loosen the edges with a knife and carefully turn it upside down onto a cake plate. Let the cake cool completely.
Prepare the chocolate ganache by combining the cream and chocolate in a microwave safe dish and heat until the cream and chocolate are melted together. Microwave in 30 second intervals, checking and stirring each interval. When the cake is completely cooled, spread the chocolate ganache over the top and allow the glaze to set up for a few hours before cutting. You can always place it in the refrigerator to speed up this process if needed.
I sprinkled some powdered sugar on the top, you could also add fruit such as raspberries or strawberries, whipped cream, ice cream, or ????
