Shrimp in Roasted Red Pepper Sauce

I have a favorite recipe for salmon that has a Roasted Red Pepper sauce on it, so, why not on shrimp 🤔? Had to give this one a try and it turned out to be another favorite to add to the collection! Then, if you like this - try the Salmon In Roasted Red Pepper Sauce!

In my attempt to keep things organic and cleaner, it took a couple stops to find good quality shrimp that wasn’t farm raised, Natural Grocers pulled through for me, thank you! This was a one pound bag of frozen shrimp and made about four servings. It would be good served on top of rice or cauliflower rice for a more filling meal, or just alone is great too! I used coconut milk here as a substitute for half and half, a good alternative to remember when you are making creamy sauces, it serves as such a simple adaptation to eliminate the dairy. And, you can add a little parmesan cheese, it is optional topping depending on your eating style.

INGREDIENTS -

1 pound peeled and deveined shrimp
3 Tbsp ghee
1/2 Tbsp paprika
1/2 tsp red pepper flakes
2 garlic cloves, minced
12 oz jar of roasted red peppers
3/4 cup thick coconut milk (canned)
1/2 cup parmesan cheese (optional)
salt to taste
2 Tbsp parsley, chopped, reserve some for garnish

Place the roasted red peppers, including liquid, into a small food processor or blender and process until smooth.

In a large skillet, melt the ghee over medium high heat. Add the garlic and cook for one minute. Add the shrimp, paprika, and red pepper flakes, sprinkle with salt, and cook for about 5 minutes, turning the shrimp halfway through. Remove the shrimp to a plate with a paper towel. Add the red pepper puree to the same skillet and cook over medium heat for about 7-10 minutes or until most of the liquid has evaporated. Add the coconut milk, parsley, and parmesan (optional), simmer for a few minutes. Return the shrimp to the skillet, mix everything well and warm through for about 5 minutes. Garnish with chopped parsley and parmesan.

For such an elegant and flavorful dish this certainly was simple to put together. Put this one on your menu soon, you won’t be disappointed!
