Instant Pot Corned Beef
March is the month to test your Irish skills and cook up some corned beef! If you haven’t tried this yet in the Instant Pot, you will be very happy with how quick and easy it is to prepare your corned beef meal this year. And if you don’t have an instant pot, not to worry, this meal can also be perfected simmering in the crock pot all day.
Start with a healthy cut of corned beef, organic if you can find it. The one I purchased was sold with the seasoning packet enclosed in the package, and it was lightly brined. If the seasoning package isn’t included in your corned beef, add the ingredients listed below for pickling spices.
INGREDIENTS -
2 pounds corned beef (about 1 1/2 inches thickness)
4 cups cold water
1 medium onion, quartered
4 cloves garlic, crushed
Vegetables - potatoes, carrots, cabbage, or your favorite choices
Pickling Spices Seasoning - (if not included in your corned beef package)
1 tsp yellow mustard seeds
1 tsp whole black peppercorns
1 tsp coriander seeds
1/2 tsp whole allspice
3 whole cloves
3 bay leaves
1/2 tsp ground ginger
Rinse the corned beef in cold water. Place the brisket in the instant pot and top with the onion, garlic, and seasonings. Add 4 cups of cold water. Cook at manual high for 90 minutes, then allow for natural release, about 15 minutes.
While the brisket is cooking in the instant pot, cut up the vegetables that you want to add, most commonly used is carrots, potatoes, and cabbage, but pick and choose what you prefer.
When the pressure is done releasing on the meat, remove the brisket and set aside. Pour off the liquid into a large measuring dish, then return 1 ½ cups of the broth to the instant pot. Add the vegetables. Cook at manual high for 3 minutes and then quick release the pressure. Pretty fast huh?!?
But I don’t want to leave anyone out! No instant pot? You can prepare the same meal in a crock pot, place all the ingredients in the crock pot and cook for 6-8 hours.
