Egg Roll in a Bowl

This is not so much of a new idea anymore, now it has been around long enough that it has almost become an old classic, and it is a great one! Egg Roll in a Bowl is such an easy and healthy meal, and thus, one that must be shared 😊.

A couple of things before we start . . .

I first tried an Egg Roll in a Bowl recipe made with ground turkey, it was a recipe idea I had seen and it did make sense that it would be healthier to use ground turkey right? But something was lacking in the flavor and I guessed it was the meat. The next time I tried it with ground pork, and yep, that did the trick! Another kitchen tip - this recipe includes shredded cabbage and carrot, and although I am usually a “do-it-yourselfer” in the kitchen, if the time isn’t there, don’t hesitate to use a bag of pre-shredded cabbage and carrot. The bag is a great time saver, it probably won’t have the same bright flavor as if you used fresh sliced and grated, but sometimes you gotta do what you gotta do.

INGREDIENTS -

4 Tbsp coconut aminos
1/2 tsp chili garlic sauce (or more if you like it hot!)
1 tsp honey
2 tsp rice vinegar
1/2 tsp sesame oil
1 Tbsp avocado oil
1 pound ground pork (or turkey or beef)
1 cup shredded carrot
4 cups shredded cabbage
1/2 cup thin sliced red onion
2 large eggs
1 tsp salt, approx
1/2 tsp pepper, approx
Optional toppings - sesame seeds, cilantro, and green onion

In a small bowl, whisk together the coconut aminos, chili garlic sauce, honey, rice vinegar, and sesame oil. Set aside.

In a large skillet, dutch oven, or wok, add avocado oil and bring to medium high heat. Add the ground pork and cook until no longer pink. Add the shredded carrots, cabbage, red onion, and the sauce to the pan and mix together. Salt and pepper to taste. Cook for 5 minutes, stirring occasionally. Push meat and vegetables aside and crack eggs into the empty spot in pan. Scramble the eggs with the spatula while they cook. When the eggs are cooked, stir them in with the meat and vegetables.

Find your favorite bowl, pile on the meat and vegetables, add your favorite toppings, and enjoy!
