Homemade Hummus

It is time for hummus! The garden vegetables are ready - cherry tomatoes, cucumber, carrots, peppers and kohlrabi. Now I will just grab that container of hummus I bought last week….hmmm, it’s not looking so good. 😩 That has happened to me several times over the years so it is now time to solve that problem. I’ve always heard it is easy to make your own hummus so it’s time to try that, I want fresh hummus on hand always!

After studying a few recipes I landed on the basic recipe from the Vitamix web site, it turned out to be just right so thank you Vitamix!

INGREDIENTS -

2 cans chickpeas, with liquid from 1 can
¼ cup sesame seeds or 1/2 tsp sesame oil
2 Tablespoons extra virgin olive oil
½ lemon, peeled
1 garlic clove, peeled
1 teaspoon ground cumin
½ teaspoon salt
1/2 cup feta cheese

If you are using a blender other than a Vitamix or commercial grade blender, use the sesame oil rather than the seeds as the seeds may not get ground up.

Place all ingredients except feta into the Vitamix container in the order listed and secure the lid.

Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute, using the tamper if needed to press ingredients toward the blades. Season to taste with salt if desired.

Make a platter with your vegetables, placing the hummus in the center with the feta cheese sprinkled on one side.

This is such a beautiful presentation, and then add the fact that it has great flavor and it is a perfect way to use up those garden vegetables, it’s kinda like the perfect summer dish!
