Banh Mi Bowl (Paleo, Whole30)
Love a tasty Banh Mi sandwich? Well, here it is in a bowl! And I for one, think everything is better in a bowl!
This bowl starts with a healthy foundation of cauliflower rice, and then topped with seasoned ground pork, veggies, and spicy mayonnaise.
In Vietnamese cuisine, a traditional Banh Mi is a short baguette with thin, crisp crust, and soft, airy texture. It is often split lengthwise and filled with savory ingredients like a submarine sandwich. But since I love everything in a bowl, this is an untraditional Banh Mi sandwich 😆. I think you will enjoy bringing a little taste of Vietnamese cuisine to your own kitchen, here we go . . .
INGREDIENTS - This makes about 3 bowls
1 pound ground pork
3 cloves garlic, minced
1/4 cup coconut aminos
1 Tbsp arrowroot starch
1 tsp fresh ginger, minced
12 oz cauliflower rice (or substitute regular rice)
1/2 cup cucumber, sliced
1/2 cup shredded carrots
1 jalapeno, seeded and sliced very thin
Cilantro for garnish
1/4 cup healthy mayonnaise
2 tsp sriracha
In a small bowl whisk together the coconut aminos, arrowroot starch and ginger.
In another small bowl, stir together the mayonnaise and sriracha to make spicy mayonnaise.
Cook the cauliflower rice according to directions on package, turn off the heat and cover to keep warm.
Bring a heavy saucepan to medium heat and add the ground pork. Stir frequently and cook until the pork is no longer pink. Stir in the garlic and continue cooking for another 3-4 minutes. Pour off any excess fat and then add the coconut aminos mixture to the pork. Stir together for a couple of minutes until the pork is coated and the sauce has thickened.
Assemble the bowls by dividing the cauliflower rice between bowls and then top with the pork and veggies. Drizzle the spicy mayonnaise over everything and add cilantro garnish.
