Basil Cucumber Salad
Two things that are very happy in my garden right now are cucumbers and basil, very, very happy! So off I go in search of recipe ideas and this one seemed perfect. First try and I decided it was a keeper.
This is a simple recipe, one that I would normally have all the ingredients for, and it doesn’t take long to make. All good reasons to keep this one in my regular summer meal planning.

INGREDIENTS -
4 cups sliced cucumbers
2 green onions, thin sliced
1/3 cup thin sliced red onion
1 cup fresh basil, chopped
3/4 cup fresh cilantro, chopped
1/2 cup peanuts, chopped
2 Tbsp sesame seeds, toasted
DRESSING -
3 Tbsp fresh squeezed lime juice
2 Tbsp olive oil
2 Tbsp rice vinegar
1 Tbsp coconut aminos (soy sauce replacement)
1 garlic clove, minced
2 Tbsp honey
Whisk all the dressing ingredients together in a bowl and set aside.
Combine remaining ingredients in a large bowl. Add the dressing and toss until coated evenly. Keep covered and refrigerated. Makes 4-6 servings.
