Garden Breakfast Scramble

Well now that we have learned a bowl of Wheaties is not necessarily the best way to start the day ๐Ÿ˜†, hereโ€™s a simple idea you might like to try!

Since our recommended food triangle has turned upside down (again), the vegetables are considered to be a solid foundation. So if you start the day by adding them in at breakfast, you are on your way to getting the vegetables and nutrients your body needs for the day.

A scramble is one of my favorites, maybe because I donโ€™t have the patience to make an omelette, and have never been able to flip it just perfectly without breaking it, and to get those eggs so fluffy? - Too much work! So, why not a scramble, itโ€™s basically the same bite right?

Here are some of my favorite ingredients -

  • Zucchini (an essential in the summer ๐Ÿ˜†)

  • Broccoli

  • Roasted sweet potato or potato

  • Roasted butternut squash

  • Green onion

  • Tomato

  • Peppers - any color, any kind

If you are making roasted vegetables for a dinner, double up the amount and you will have leftovers for a morning scramble. (Kitchen tip #142) ๐Ÿ˜†

In a heavy pan, heat a tablespoon of avocado oil to medium, then add your vegetables. Stir fry until you see some browning, the browning adds just a little extra flavor. Scramble up your eggs and pour over the cooked vegetables. Add salt and pepper to taste, and then a little garlic powder to put some magic into this breakfast. If you are including tomatoes, top the scramble with those when you are done.
