Fresh Garden Salsa
Garden tomatoes are abundant! And that means salsa . . .
I usually prefer a chunky pico de gallo type salsa with carefully diced tomatoes, cilantro, onion, and green chilies, but one day I was busy, and there was a pile of tomatoes, so out came the Vitamix. There are several other good blenders to use also, so if Vitamix isn’t your brand, use what you have 😊!
This was delicious and very easy to make, so now if you ever find yourself with a pile of tomatoes and a busy day, you know which recipe idea to try.
INGREDIENTS -
4-5 tomatoes
1 1/2 cups cilantro
2 cloves garlic
1 cup sweet onion, or about half a medium onion
1 can green chilies, or garden fresh if you have them
1 Tbsp lime juice
1 tsp salt
1/2 tsp pepper
The directions are to let the Vitamix do the remainder of the work for you! Place the ingredients in the blender and pulse several times to stir, then blend on a low setting for about 20 seconds. Check the consistency and blend longer if you prefer.
If you like a little heat in your salsa, you could add some jalapeno or a squirt of hot sauce, I prefer mild so it’s not on my ingredient list, but it would be good!
